Dark Chocolate Coconut Milk Ice Cream

This dark chocolate coconut milk ice cream recipe is actually a re-do of my first one. I was actually going to get a little crazy and make something new and when I got in the kitchen and starting playing around, I realized that there was some room for improvement in my first version of chocolate coconut milk ice cream. Not that it isn’t awesome, because it is, but I think these couple of tweaks take it to a whole new level. The brewed coffee is the secret here, something about the flavor of coffee really enhances the richness of the chocolate. And lets face it here, when we want chocolate ice cream, we want it to be rich.

And by we, I mean me.

Dark Chocolate Coconut Milk Ice Cream

A Re-Do

Makes about a quart

2 cans coconut milk

1/2 cup agave nectar

3/4 cup cocoa powder

1 tbsp vanilla extract

1 tbsp brewed, cold coffee

1/2 tbsp chocolate extract

1/2 tsp xanthum gum

Add all of the ingredients to a blender and process until mixed very well. Place the mixture into the refrigerator for about 2 hours. Remove from the refrigerator and process again just to be sure it is stirred well. Add to your ice cream maker according to the manufacturer instructions. I have found that with coconut milk ice cream, the longer, the better. I left mine in the ice cream maker for about 40 minutes. Remove from the maker and scoop into a freezer safe dish and freeze until ready to serve. If you eat it right away, it will be more like soft serve but if you freeze it before eating, it will be more like store bought.

  1. This sounds so good. Can you taste the coconut at all? I love coconut so that is why I was wondering. My favorite flavor is chocolate with peanut butter chunks!

      In this recipe, I don’t think you can taste the coconut because the chocolate flavor is really intense. But, in my other coconut milk ice cream recipes, you can. Some milder than others but it is pleasant if you like coconut.

      The PB chunk is what I was going to make at first until I realized the chocolate by itself was post worthy. Stay tuned :D

    My husband and I got an ice cream maker for our wedding but unfortunately have not used it as often as we could have. This post has inspired me to break it out! And my favorite flavor of ice cream is Black Rasberry Chip, a signature of Graters in our hometown of Cincinnati!

    I borrowed my friend Beth’s ice cream maker, made a batch of this to split between another friend and I, and made another batch for the woman who loaned me the ice cream maker. It was AMAZINGLY GOOD!!! When Beth came by to pick up the ice cream and the maker, it was afternoon and she had not eaten yet that day (!!!). I handed over the goods and by the time I was back in my apartment she had texted me about how DELICIOUS the ice cream was, and that she had chocolate on her nose because she didn’t have a spoon and was going at it with her teeth. Thanks from all of us! Can’t wait to borrow her maker again and try the peach ice cream.
