Pan Fried Potatoes

I had pan fried potatoes for the first time about 10 or so years ago, I know, it is kind of a shame that I’d never had them before. Now days, it is one of my favorite ways to prepare them. As with most anything else I make, the ingredients are simple and you probably already have them in your pantry. They come out similar to roasted potatoes but the outside is even crunchier, similar to a french fry. As you can see, we douse them in ketchup but they would also be just as delicious with a creamy dip like ranch dressing.

Pan Fried Potatoes

Serves 3 to 4

1 lb small red, organic potatoes, scrubbed

2 tbsp grapeseed oil, plus more as needed

house seasoning, to taste

Slice the potatoes into thin circles or half moons, depending on how large your potatoes are. They should be about 1/4 inch thick for best results. You may use a mandolin but a sharp knife does the job just as easily. Meanwhile, heat the oil in a large, non-stick skillet over medium heat. Once the potatoes are sliced and the oil is hot, add the potatoes to the pan. Season the potatoes with the house seasoning and cook for 4 to 5 minutes. Stir the potatoes, season again and continue this process until most of the potatoes are golden brown. It normally takes about 30 to 45 minutes, depending on how thick you sliced the potatoes. You may need to add more oil as you go along if the potatoes start to dry out. Serve the potatoes hot with plenty of ketchup.

    I LOVE pan fried potatoes. My mom use to make the best ones with a lot of oil, they would get all brown and crispy. YUM. Haven’t had those kind in YEARS. But can still remember how good they were.

  4. You know, I never was a huge potato person (my mum makes fun of me for being the only child she knew to refuse mashed potatoes), but I do like a boiled red potato here and there. I do love to pan-fry them with some onion and a few apple slices too for a sweet-and-savory breakfast dish.

  5. We loooooove home fried potatoes, but (as with everything I make) I add onion and garlic — and rosemary if I’ve got some — to the pan, too.

    My dad’s gf makes these and they are so delicious. My favorite way to eat potatoes… well, actually, I can’t think of a way I don’t like potatoes. My grandma makes a potato dish with white sauce that is really good, but I have no idea what it is called.
