Oatmeal Pancakes

I love oatmeal pancakes for breakfast in the summertime. They are still filling like a good bowl of creamy oatmeal minus all of the steamy heat. I’ve made them a number of ways, topped them with a million different things but have found this method to be my favorite. The key to perfect oatmeal pancakes is soaking the oats overnight in the milk so they because soft and lend themselves to a creamier, fluffier center. The way pancakes should be.

Oatmeal Pancakes

Serves 1

1/4 cup oats (I use gluten free oats)

1/2 cup rice milk, or other milk of choice

1 egg, beaten

1/4 tsp vanilla extract

2 tbsp flax seed

1 tbsp coconut flour

1/4 tsp aluminum free baking powder

dash of salt

1 tbsp coconut oil

Topping of your choice (strawberry agave jam and homemade nut butter is my current favorite)

The night before:

Put the oats, the milk and a dash of salt into a bowl. Stir well, cover and refrigerate overnight.

In the morning:

Combine the soaked oats with the remaining ingredients except the coconut oil and your toppings. Stir well to combine and set aside to thicken. Over medium heat, melt the coconut oil in a large skillet.  Once the oil it melted, test the temperature by adding small drops of water from your fingertips into the pan. If the water dances on the surface, it is ready. Stir the oat mixture once more and pour it into the pan. You can either make two smaller oatmeal pancakes for easier flipping or one large pancake. Cook the oatmeal pancakes until bubbles start to burst on the surface and the edges start to brown. Flip the pancakes and cook for a couple more minutes until cooked through. To ensure the pancakes are light and fluffy, only flip them once. Serve the oatmeal pancakes while hot and top with your favorite toppings.

  5. Mmmm. Those look so good. I haven’t had pancakes in forever because they have been on my “bad” foods list, but I feel like I’m ready to challenge myself and I may do it with this recipe!

  6. How wonderfully healthy! I would love to try this using the oats and also our favorite whole grain flour called Kamut! We love this flour so much and have been using a pancake mix with it but I would love to make them from scratch using your recipe!! Thanks :)
