Garlic Swiss Chard

One of the vegetables my CSA has had plenty of so far this year is swiss chard. I like swiss chard because it cooks quickly and is a nutrition powerhouse. It is packed with vitamin A, C and K as well as being a good source of magnesium, iron and potassium. I like to prepare swiss chard just as I would kale; lots of garlic, onion and a dash of nutmeg. If you like spicy, add in a little crushed red pepper  and then drizzle with apple cider vinegar for an extra kick. Pair the garlic swiss chard with my simple spicy salmon recipe and you have a healthy meal in less than 15 minutes.

Garlic Swiss Chard

Serves 2

1 large bunch swiss chard, washed, woody stems removed and chopped

1 tbsp olive oil

2 small garlic cloves (only on one if you use non-organic, organic tends to be very small)

1 tbsp minced onion (dried or fresh)

dash nutmeg

crushed red pepper, salt and pepper to taste

apple cider vinegar (optional)

In a large skillet, heat the olive oil until shimmering. Add in the swiss chard, the garlic and the onion and toss in the oil to coat well. Stir fry the swiss chard until it begins to wilt and then season with the nutmeg, crushed red pepper, salt and pepper. Continue stirring until the swiss chard is bright green and tender. Drizzle with apple cider vinegar and serve piping hot.

  10. I posted too about Swiss Chard a few weeks ago. Honestly, I was not impressed. Funny thing though, I’ve seen it on at least 2 other blogs this week! Maybe I should give it a second chance–perhaps my culinary skills aren’t up to par!

      Swiss chard is a pretty bitter green and some people just don’t have a taste for them. Try the apple cider vinegar drizzle and see if that helps, it kind of cuts down on the bitterness and gives the greens a kick.

  14. I still have a hard time with Swiss Chard – I used to only be able to stomach a few bites, and now I can eat a whole serving although I don’t really enjoy it. It’s such a nutritional powerhouse, so I keep trying and I think it’s growing on me. The last time I made it was very similar to what you just posted!

    This is the first time I will make Swiss Chard. I like most Greens, as Paula Deen would say, so this new recipe will be coupled with Roasted Leg of Lamb with Rosemary and Garlic, Swiss Chard and Apple and Pear chucky Sauce. Wish me luck.
