Homemade Cranberry Walnut Granola

Making granola at home is quick, easy and most importantly, cost effective. You can mix up the flavors anyway you like and this homemade cranberry walnut granola is one of my favorites thus far. I like to eat granola as a snack or even as breakfast on the days when I am in a big rush. Since it has a great balance of protein, carbohydrates and healthy fat, it can stick to your ribs just as any good bowl of oatmeal can.

Cranberry Walnut Granola

3 cups oats

1 cups puffed whole grain cereal with no sugar added (use more oats instead if you like)

1/4 ground flax seed

1 cup walnuts, roughly chopped

1 cup unsweetened, dried coconut

1 tsp cinnamon

1 cup juice sweetened, dried cranberries

1/2 cup coconut oil

1/3 cup agave (use 1/2 cup if you like your granola to be sweet)

1 tbsp vanilla

Preheat the oven to 400* and heat the coconut oil, agave, vanilla and cinnamon in a small saucepan over low heat. Meanwhile, combine the remaining dry ingredients except the cranberries in a large bowl. Once the oil mixture is completely melted, pour it into the oat mixture and stir until well coated. Spread onto two baking sheets and bake one pan at a time for 5 minute intervals. Use the middle rack on the oven and if you decide to bake both pans at once, place the second pan in the upper portion to avoid burning the granola, it goes from perfect to burnt really fast. Between 5 minute intervals, stir the granola around to ensure even browning. Cool the granola on the pan and stir in the cranberries and then store in an air tight container in the freezer.

  6. I love homemade granola way more than store bought! I use the puffed wheat in mine too. It adds some bulk to it. I love making all kinds of flavors that you just can’t buy at the store! Yours looks delicious!
