Dijon Baked Cod

Besides my batch cooking antics, another one of my specialties is 15 minute meals and this dijon baked cod recipe fits the bill perfectly. Though cooking is one of my greatest passions, sometimes, I just don’t have the time or energy it takes to prepare an elaborate meal. And nothing comes to the rescue quite like a simply prepared fish can.

A few simple ingredients and a hot oven is all you need to whip this up in a flash. Serve it with a simple salad or my sweet and spicy green beans and you have dinner in less than 15 minutes.

Dijon Baked Cod

(2) 6 oz cod fillets

2 tbsp dijon mustard (use less if you don’t like it spicy)

1 tbsp olive oil

1 lemon, cut into wedges

1 tbsp fresh parsley, chopped

salt and pepper, to taste

Preheat the oven to 425* or get the broiler hot. Lay the fish in a baking dish and coat well with the olive oil. Season the fish with salt and pepper and then brush the Dijon mustard onto the top side. Bake or broil the fish for about 10 minutes until it is cooked through and flakes easily with a fork. Squeeze with lemon juice and sprinkle with parsley. Serve the fish piping hot.

    Also, I saw your choco-coconut ice cream recipe on EBF right before I read this! It looks so good! James is a big fan of ice cream so I think I might have to buy him a maker this summer so that he can run “tests” on a few recipes…such as yours… ;)
