runny homemade coconut milk yogurt, make sweet potatoes floating on a sea of creamy white goodness. This breakfast was born out of sheer genius, I mean necessity.

I had planned to have sweet potato oat bran for breakfast but when it came time to eat, I wanted something cool instead. A perfect time to use up the homemade coconut milk yogurt I made over the weekend except it wasn’t thick and creamy like I was expecting. It didn’t really change texture at all shy of a couple lumps here and there. At first, I was dissapointed until I decided to pour it over baked sweet potato slices.

I topped it off with a drizzle of homemade coconut butter and delightful treat was born.

The coconut butter kind of hardened like magic shell, which gives me great ideas for my homemade coconut milk ice cream come summer.

To say I enjoyed this breakfast would be quite the understatement. It was cool, creamy and perfectly sweet. A great way to start off spring if you ask me!

Last week I came up with a great wrap; threw together leftover quinoa, blackbeans, veg, hot peppers, salsa and tzatiki and wrapped it up. Sounds a rather gross combo but it just worked. Love it when that happens.

I’m drrroooooling! Yum! I can’t think of anything specifically that I made on accident but I do put granola in my batters for pancakes, etc. and when I was out to brunch this past weekend they had “Earth Cakes” on the menu — pancakes with granola in the batter. Someone out there must be reading my blog…jk jk! :)

I’m not one for sweet potatoes but that looks fabulous. When making homemade yogurt, did you use one of the starter probiotic packets they sell at the health food stores? What was your base?

I have been using coconut milk and probiotics (the same kind I take which is fine according to what I have been reading and from what Gena says) and I have a yogurt making. It gets that yogurty kind of taste but does not get thick at all.
