Wow, what an amazing response from you guys about comparing ourselves to other bloggers. You all are amazing and I wouldn’t trade you for the world! Each and everyone of us have a place here in this blogging community and I am so proud to be a part of it.

Now, onto some eats. I’m not doing very well in the variety department, at least not with breakfast. But, I am really enjoying what I am eating. Today was the second day I had spinach Oat Bran and eggs which is think is a nice change from the sweet concoctions I’ve been coming up with. It is also pretty much mis-combined but as I mentioned in my food philosophy, I think it is more important to honor what our bodies are asking for rather than following hard and fast rules. This breakfast is very tasty and it is exactly what my body has been craving for two days.

So, with a satisfied stomach, I head off to the final work day of the week. It is supposed to be a gorgeous weekend and I can’t wait for it to begin. Come on 5pm!!

What is on your agenda for this weekend?

Your breakfast combo sounds tasty. Did you post how to make it in another post? I’ll have to check and find out.

Thanks for checking out my blog! Yes, portobello mushrooms are great pizza toppers! I just tried out some gluten free baking Wednesday and you’re right, nothing noteworthy about that. Hopefully it was just a fluke thought. Have a great weekend!

Heather, thanks for stopping by!

I do not have a formal recipe for my breakfast today. I just make the oat bran with water and then stir in a huge handful of spinach at the end and cook for another minute or so. I season it with sea salt, crushed red pepper and garlic. I also typically add some earth balance during the cooking process to give it some richness.

As for the portabella mushrooms, I use them as a crust for the pizza, not as a topping! Check it out!

we have a lot of fun things planned this weekend, but now my m-i-l has fallen ill and we are not sure how things will shake out.

on another note, i just started reading “eating in the light of the moon” and can’t wait until tonight before bed to dig into it some more.

I am definitely going to have to try this breakfast. While I am partial to my nut butter oats…I would be lying if I said I had tried making/eating savory oats. In all honesty – they frighten me a little. I’m a creature of habit – ESPECIALLY with food so venturing off that far is hard for me. I am much more adventurous with dinner for some reason. Crazy, weird me – I eat the exact some two or three things for breakfast everyday, but you’ve inspired me to try something new!!!

As for the weekend – we’re heading to the park now and then out to dinner. The rest of the weekend is supposed to be bad weather. :(
