Tonight’s dinner was Snobby Joe’s from my favorite vegan cookbook, Veganomicon. They are an old favorite around here and are perfect for batch cooking on the weekends. They freeze beautifully (a term I stole from Steel Magnolias) and are great for something that you can quickly heat and get on the table. They are made with lentils, tomatos, green pepper, onions and delicious blend of spices. We like them wrap style with spinach and hot mustard.

After arriving home tonight, dinner was on the table in a matter of minutes and now we have the rest of the evening to enjoy. We will probably catch up on the DVR and hit the hay pretty early. We must rest up because the weather is going to be gorgeous tomorrow and we want to get out and play!

love love love snobby joes from veganomicon. I actually made a version using taco seasoning instead of the original recipe. freak’n awesome.

Those look so good! I think I’ve overdone it on meat eating lately so I’ve been trying to take a more vegetarian approach. I might have to get that cookbook.

I like sloppy joes – my mom never made them when we were little, so they were a treat to eat at other kids’ houses. I’ve not made a grown-up version, though… maybe I should.

Mmm I made a version of snobby joes a few weeks ago and absolutely loved them. Lentils have been such a wonderful discovery for me. I just love their texture and earthiness. They’re especially delicious in chili. I love the way they look in your wrap! Beautiful photography

When you said that they were ready in a matter of minutes, is that because you got them out of the freezer, or are they really that simple?! I’ve never looked at that cookbook, but I read about it often enough that I probably should!

Ah, yes, I actually made them earlier in the week so all we had to do was heat them up. If you are cooking them from start to finish, including using dry lentil, they take about 45 minutes.

I’ve seen you make these many times and they look sooo good!

I have the cookbook and the only thing I tried was the chickpea cutlets that were all rage when the book first came out. I think I messed up the recipe, but I could still tell why people liked them.

I’ve always cracked up at that name…SNOBBY joes…haha, why snobby? It’s cheaper than meat, actually. Maybe because of the sense of nutritional superiority one feels while eating it?
either way, I haven’t tried it…but I will soon!

I don’t have that cookbook, but am currently trying to cook my way through the Passionate Vegetarian cookbook which was written by a wonderful woman, Crescent Dragonwagon, from my hometown (well the area anyway) and THERE ARE NO VEGETARIANS THERE so I was shocked to learn where she was from!! The Snobby Joe’s look amazing!

even though i have it, i have never made anything from veganomicon. i think i’ve been intimidated by the long lists of ingredients, but after i saw your post i looked over the recipe and i have everything! i am ready for some snobby joes!

putting them in a wrap is a great idea also! :)
