I told you I was going to switch things up.

This morning, I needed a little pick me up since I tossed and turned all night. My body just did not want to wind down which I am sure is related to the time change. When the clock struck six this morning, I desperately needed a boost. Since I don’t “do” caffeine anymore, I rarely eat chocolate but this morning, it just felt more than right.

Ever had a chocolate and zucchini muffin? Well, imagine it with a warm, creamy texture and packed with nutrition.

My chocolate and zucchini bowl contained:

  • gluten free oat bran
  • unsweetened vanilla rice milk
  • 1 grated zucchini
  • coconut milk
  • coconut oil
  • wonder cocoa (which I buy for the low caffeine)
  • ground flax seed
  • vanilla stevia

It was more than delicious and was just what I needed to get going this morning. It was actually a wee on the rich side so I’m saving part of it for later. You can’t beat dessert for breakfast.

I totally know what you mean about the time change screwing up your internal clock. My alarm has hit me like a sack of bricks the past few mornings.

Your breakfast looks yummy, per usual! I feel like my bowls of oatmeal are always akin to dessert, but I won’t lie… around the holidays I was baking all the time and when I was really rushed I would sometimes just grab a cookie for breakfast. Not the most nutritious thing, but it sure did perk up my morning!

Ooo, I love dessert for breakfast! But I’m afraid it’s often far leass virtuous in my case–usually a piece of leftover cake, or even ice cream! I migh have to try your chocolate and zucchini bowl instead!

This sounds fab! I am having a lot of trouble sleeping too (I actually have a post coming up on this very soon!) and I could always use a pick-me-up in the morning. Maybe chocolate is the answer!

Can I ask a possibly stupid question? Are you cooking your veggies before adding to your cereal, or along with it?

Hey Cara, I do cook the veggies with the oats/oat bran. They get softer that way. If you would like them to still have some crunch, I would add them in during the last minute or so of cooking. In the case of sweet potato or pumpkin, I bake them in advance and then stir them in at the end.

And Cara, there are no stupid questions around here :D

My goodness this looks good! I love the interesting combo- you’re so creative with your oats. And I often feel like anything with maple syrup is dessert-y! Yummm. I used to get a belgian waffle with strawberries and whipped cream all the time at my favorite little restaurant for brunch. Now that was really decadent!

Nice one, Christie! That’s a very creative way to take a more dessert-y food and turn it into a nutritional powerhouse! I like putting some of my mother-in-law’s muffins on my oatmeal (but just a little because they’re rich), and sometimes a dollop of jam to sweeten things up without going overboard.

The time change is bugging me, too – why is it so hard??

Would you mind posting the amount of each ingredient? I would LOVE to make this myself but tend to under-use or over-use cocoa in these types of recipes if I don’t know the exact measurement. It looks so yummy!

Hi Kelly, Unfortunately, I do not know the exact measurements because I find measuring to be very triggering for me. I only do it when I am writing a recipe otherwise I just kind of throw things in until it looks (or tastes) right. I do measure the oats/oat bran and milk but I can give you some guesstimates for the rest:

1/4 cup oat bran
1/2 cup rice milk
1/2 coconut milk + extra for drizzle on top
1 medium zucchini grated
1 tbsp coconut oil
1 tbsp cocoa powder (it was very rich and I would actually use less, like 2 tsp)
2 tbsp ground flax seed
3 drops vanilla stevia
