Omelet Night

Omelet night is fast becoming a favorite in our house. I much prefer having eggs at dinner instead of at breakfast because they don’t hold me over very long when my morning hunger is ripping and roaring :D Another reason I love them so much is because it is a perfect opportunity to use up any random veggies bits you may have on hand. Tonights omelet being a prime example of such :D

Our omelets were loaded with:

  • spinach
  • green pepper
  • onion
  • garlic
  • broccoli “slaw”
  • goat cheese

We are kind of running out of evening hours but I’m still hoping to be able to do some catching up on the dvr and enjoy a special treat I have in the oven. If it turns out, I’ll be sure to share with you later.

I LOVE omelettes for dinner more than breakfast actually. I love to stuff mine with any vege possible and sometimes beans too. and if I am really going crazy I’ll throw in some mozzarella cheese! :)

I *almost* threw in some lentils to them tonight but wasn’t sure how it would be so I didn’t. Maybe next time!

That looks deeelish!!! I also like omelettes more for dinner than for lunch – I find I appreciate the more subtle savoury flavours more in the evening, for some reason. Anything goes for what’s inside – lately I’ve been into mexican-style stuff, black beans, onions, cilantro, tomato, etc….yum!

Your omelet is like a perfectly browned veggie pocket… great pic! I like omelets/scrambles for dinner… quick & like you said, an easy thing to throw random vegetables into! I use peppers, broccoli, spinach or whatever I have on hand.

Yum the omelet looks divine! I love them too, but I do prefer them at night. I know I make them in the morning sometimes, but in general I prefer a grain based, sweeter breakfast!

Omelettes and frittatas are a common feature in our house…not only can you throw anything in them but they take only minutes to make and they are a one-pan meal so no messy kitchen either. A win-win!.
