Oh yes I did.

Remember that purple sweet potato I baked over the weekend? Well today, part of it landed in my oat bran. See how pretty?

Not only was it a gorgeous shade of Barney Purple, it was really tasty, too. The purple sweet potato is not as sweet as a regular sweet potato though it did have a creamier mouth feel. I really loved it and hope that I can find more once I run out.

My bowl contained:

  • 1/4 cup gluten free oat bran
  • 1 cup unsweetened vanilla rice milk
  • purple sweet potato
  • 1 tbsp coconut oil
  • cinnamon, nutmeg, vanilla stevia, flax seed

To make matters even better, I seem to be doing fine with the coconut oil so far. No adverse reactions and I am loving every minute of it. A few of you mentioned in the comments yesterday that you had never tried coconut oil, I really love it and highly recommend it. It doesn’t taste like coconut, at least not to me and it is even great for your skin.

Ooooh purple sweet potatoes! I’ve yet to see them in the market here. I’m really glad to hear you’re having better luck with the coconut oil.

I tried zucchini bread in my breakfast today (quinoa flakes) – it was pretty yummy! I’m not completely smitten, but it was definitely a nice change.

Eek. I don’t like quinoa at all. How did you prepare it? The times I have added zucchini to my oats/oat bran, I can’t really even taste it but I have been shredding it up really fine.

I’m normally not a huge fan of quinoa (in its whole form) for breakfast either, but I recently figured out a way to prepare quinoa flakes so that they taste almost as good as oats. The flakes have a nice, creamy, porridge-texture similar to oat bran. They are just as bitter as regular ol’ quinoa, but with the right mix-ins, can be tasty.

My most recent concoctions involve cooking the quinoa flakes with coconut milk/water, a small piece of banana for sweetness (though you could probably do with stevia), chia seeds (thicken it really nicely) and lots of cinnamon. I usually top with some nut butter and maybe shredded coconut.

I’ve actually got a recipe ready to go for my blog – I’ll get it up there soon. It’s a good candida-safe breakfast (minus the banana) that I may be using more and more…

Do the flakes not have that bitter, astringent taste? That is what I don’t like about it. I just can’t seem to ever make it that it doesn’t taste that way.

Cooked plain with water, yes, they definitely do. Cooked up with the coconut milk and spices – no! :) I think it’s really the coconut milk that does the trick (I’m sure almond milk would also work well).

I also tried cooking up the flakes as a savory base last night – cooked with a little bit of butter – it tasted almost like mashed potatoes. I found that the bitterness was muted big time.

Oh, also: I’ve heard that the bitterness can be reduced by rinsing the quinoa very very well using a fine-meshed strainer. My strainer has huge holes, however, so I haven’t been able to test this theory! I usually just rinse it in the pot and drain off as much of the cloudy water as I can.

This obviously doesn’t work with the flakes, however, because they’re so tiny and light – they would just get suspended in the water. This might be one reason why they haven’t popularized as much as regular quinoa.

Once I am sure I can have coconut again, I will surely try making it with coconut milk. That sounds really good. I used to make rice with coconut milk all the time.

i haven’t tried a purple SWEET potato, but i have tried just a regular purple potato…i couldn’t really taste a difference, but the color DEFINITELY threw me off!

Very pretty! When you wrote about preparing a purple sweet potato on Sunday (I think?), I actually thought that it was a typo! I’ve actually never heard of or seen a purple SWEET potato… only a regular potato.

Sometimes they are called Asian sweet potatoes. I bought these when I was down in Raleigh a couple of weeks ago and they were locally grown.

As I mentioned in the post, they are not as sweet and seemed a bit creamier. But I would say that the overall taste is the same. I love sweet potatoes.

Isn’t that funny how bright colors seem to make for a happier or better tasting meal! I love when my plate is full of bright colors. I have not tried purple sweet potatoes. I will if I see them though.

Hmmm…a couple of years ago, I ate so many sweet potatoes, the palms of my hands started to turn orange. I wonder if I can get them to turn purple. I MUST try this! But where to find it…?
