Stuffed Peppers

Tonight I decided to try my hand at making stuffed peppers again. I’ve haven’t made them in a really long time but always ooohhhh and aaaahhhh when I see pictures or read recipes for them.

I knew I wanted to incorporate some of the black beans and brown rice I prepared during my batch cooking session on Sunday and I had a few other Mexican inspired ingredients on hand so  I threw them all together and these stuffed peppers were born.

Stuffed Peppers

I don’t have an official recipe because I kind of just mixed it all together, tasting as I went, until it seemed right. The mix included:

  • cooked brown rice
  • cooked black beans
  • 1 can a fire roasted tomatoes is adobo sauce
  • 1 jalepeno, seeded and diced
  • cilantro
  • chopped red onion
  • garlic
  • chili powder
  • cumin

I stuffed the peppers with the mix and baked them for about 30 minutes at 400*.

They turned out really well. Not 100% sure how I feel about the fire roasted tomatoes so next time, I think I would use regular tomatoes with chilies instead. Overall, I think for my first try these turned out really well and as long as they agree with me, I think I will add these into regular rotation.

I’ve actually NEVER made stuffed peppers before! But I think if and when I do, I’ll probably use ingredients similar to yours.

I can’t say I’ve ever met a bad stuffed pepper. My mom makes them with a mixture of ground beef and ground turkey with onion, fresh tomatoes, and barley, along with various spices. I prefer mine with red peppers. Yours sound and look fabulous!

I actually prefer red peppers myself but they sadly, they don’t agree with me so my husbands was red :(

yum I love stuffed peppers – I stuff them with all different thing – sometimes I stuff them with quinoa – sometimes rice and breadcrumbs – sometimes just bread and cheese. so many options – all SO good!

Christie these look great! I love stuffed peppers, and I’m always on the lookout for a new vegetarian recipe. I typically put ground beef in them and then top them with cheese. So filling and flavorful. Your recipe is perfect because, like you, I usually make those big weekend batches so I have the ingredients at the ready!

Stuffed peppers are a great way to use up all those leftovers – you did a perfect job at that! I like to put wild rice and onions and tomatoes in mine, with maybe a little cheese on top. Yum :)

what a great mixture for the stuffed pepper! i like to use bulgar wheat for mine or brown rice, and add in burger crumbles/tofu/eggs to mine! i always use marinara as the sauce base though; i should try it mexican next time!

The last time I made peppers was when I still ate meat! I stuffed them with a tomato, rice and ground meat mixture.

These look AWESOME!! Gahh I miss tomatoes so much, still can’t eat them bc of the ol’ tonsils grrrrrr!

I make stuffed peppers with ground turkey, tomato paste, ginger and soy sauce (plus some other odds and ends) – I love the different flavors going on in the dish :)

I usually like to make my stuffed peppers with either red, yellow, or orange peppers because they always taste sweeter than the green. I like to put quinoa, black beans, crushed tomatoes, cilantro, cumin, chili powder, cayenne and some red onions in mine, topped off with a teensy bit of cheese…these always end up great!

I used to make stuffed peppers all the time but haven’t for a looooong time…. I used to fill them with a rice/grain mixture… I’ll have to stuff some again! :)
