Carrot Cake Oat Bran

Remember a couple of days ago when I made carrot cake oat bran but I wasn’t really impressed with the texture? Well, today, I gave it another go and it made all of the difference. I grated the carrots super fine on a microplane, they were basically mush when I was done but the results were wonderful.

My oat bran contained:

  • 1/4 cup gluten free oat bran
  • 1 cup unsweetened vanilla rice milk
  • 2 finely grated carrots
  • 1 tbsp grapeseed oil
  • 3 drops vanilla stevia*
  • lots of cinnamon
  • ground flax seed
  • *(use the sweetener of your choice but add in vanilla extract if you don’t use vanilla stevia)

This was nothing short of delicious. It gives sweet potato oat bran a run for it’t money for sure.

Anyone else ready for the weekend? I have a three day weekend this week because I am taking Friday off to work on my jewelry business. It is finally starting to come together (in my head) and I can’t wait to unveil my new site soon!

Oh wow, I didn’t know about your jewelry business! So great!
Such a wonderful bowl of carrot cake oatbran! And can I ask: how is stevia? I’ve had one of the packets before in my coffee (sweetleaf brand maybe?) and I felt like it had too much of a grassy/earthy aftertaste. Are the drops better?

I like the drops but not if I overdo it. I only do one, two or three drops depending on how big my serving is. Some people put like five and that gives me that same aftertaste you speak of and I don’t like that at all. I have never had luck with the packs, I always end up with the aftertaste.

I can see you on TV doing a commercial for which the tagline is “no one comes between me and my oat bran!” ;) Looks really good, though! I’m a huge carrot cake fan, so perhaps I need to try this.

Glad you liked it when you grated it finer. I don’t eat oats often – I can’t decide if I can tolerate them or not – but I like to throw in veggies wherever possible. :)

I tried carrots in my oats for the first time this morning, thanks to your suggestion, and loved it. I grated them finely over the pot as my oats were cooking so they got a little soft and steamed on the way down, which probably helped texture-wise. Not that I’ve ever had trouble getting my carrots in, but its so great to know you’re already getting your first serving of veggies first thing in the morning!

I have been making jewelry off and on for years and have even sold it from time to time but have never gotten into selling it with any real seriousness. But, this is the right time to get real with it. I can’t wait to start sharing my pieces with everyone!
