Happy Monday, dear readers! I hope you all are well this morning. Thanks for all of your comments on my ask me anything answers post. A few of you commented about how busy I am during the week and how I maintain my blog and I wanted to tell you guys that I love blogging. I love reading blogs, writing blogs, answering your comments and emails. Blogging has been such an important part of my recovery that I don’t know where I would honestly be without it. So, I make time for it. With that said, as I mentioned in the post, I also work in an industry where down time is just part of the norm. But then there are times where I am working hours of overtime and can’t even think straight so I guess it all balances out. But, no matter where I work, I will make blogging a priority because I do love it so.
Now, onto breakfast.

This morning, at the suggestion of Elizabeth, I put zucchini in my oatmeal. And yes, I had oats instead of oat bran. I’m branching out
Anywho, other than it needing a little more stevia and cinnamon than usual, I must say that I liked it.

My bowl contained:
1/3 cup gluten free oats
2/3 cup unsweetened vanilla rice milk
1/2 small zucchini, grated
1 small carrot, grated
1 tbsp grapeseed oil
3 drops vanilla stevia
lots of cinnamon
flax seed
I really liked this bowl though it did have to grow on me a bit. I’m not into crunchy when it comes to oats and the zucchini and the carrots were still a bit crunchy. I think when I try this again, I will grate them up even finer and see how that works out. I just used a regular grater so we will see how it goes again. The flavor was awesome and I sure feel good knowing that I already have a couple servings of vegetables in my day!

Thanks for sharing this idea! Zucchini is one of my all time favorite veggies, but it never dawned on me to add it to my oats. I’ll have to try that this week! Mmmm.

Ironically, I am not the biggest zucchini fan. I am starting to like it more these days now that I am eating more veggies in general but it was pretty tasty in the oatmeal. I need to work on texture a bit but I did like it.
What ways do you like to prepare zucchini? I need some new ideas
My favorite way to prepare it is to cut it into spears (or chunks), toss it with a bit of olive oil, salt, pepper and either grill it, roast it in the oven or saute it in a pan with other veggies (onions & mushrooms are my favorites to add in). Pretty simple, but it makes for a quick, tasty side dish.
Sometimes I’ll saute it and use it as a pizza topping or mix it in with spaghetti sauce to bulk it up. And it goes well with Asian dishes too!
I don’t shred it often, but when I do, it’s usually when I make meatloaf. (One of my favorite recipes is this one.)

i would say that adding pureed squash to stuff (for creaminess) is probably the “weirdest” place i’ve added veggies…but that’s not too “out there”

I know, the same with me and the green smoothies. It just seems normal to add a couple handfuls of spinach! Speaking of, can’t wait for warmer weather to inspire some smoothie action.
I tried the green smoothie thing but just couldn’t do it! Now I add veggies everywhere else with no problem.

I actually like green smoothies but only in the summer time. I assure you that you can’t taste the spinach as long as you use fresh, baby spinach and not more than a couple handfuls.

I love the idea of zucchini and carrot in your oats. I wonder if you cooked them a little longer, they would get softer. If you grate them finer, that will do it. NICE!

Glad you liked it! I use the finest setting on my grater and sometimes I’ll use a zester. I also like to add cocoa powder and raisins.

Creative veggie sneak attack with that breakfast! But a great way to get some servings in – I adore zucchini bread so if this is anything like that then I bet it was deelish! I think adding spinach to smoothies is about as random as I’ve gotten as far as unconventional places I have added veggies

The craziest place I ever put a veggie (if you repeat this I’ll deny it cause my husband and kids still don’t know!!) but I blended spinach into pumpkin/walnut pancakes one time and no one noticed!! They tasted amazing and I felt better knowing that my girls got some spinach that morning.

Mmm, I love zucchini bread so if this is even remotely like that, then I’ll love it! I can’t think of a really strange place that I’ve put a vegetable, though I will admit that if I’m craving oatmeal for dinner, I eat it with a side of broccoli. It’s because I feel like I just have to eat a veggie at dinner. Is that crazy?

No, I don’t think that is crazy at all. I struggle with that sometimes too. I plan to write a post on my food philosophy soon but will say that in order to get over always feeling the need to eat veggies, I had to go through times where I just didn’t. I had to give myself back the control and do for dinner what I wanted to do. Sometimes, that just means a bowl of oats. I eat veggies all day, every day now but it was a slow transition and even now, if I just wanted oats for dinner, I would just eat oats for dinner.
