Carrot Cake Oat Bran

OK, so carrot cake is probably a real stretch but none the less, my breakfast this morning was delicious! Last week, I ate sweet potato oat bran for six days straight so this week, I wanted to branch out. I roasted pieces of chopped carrot and mixed them into my oat bran for a pleasing breakfast treat.

My bowl contained:

1/4 cup gluten free oat bran

1 cup unsweetened vanilla (brown) rice milk

1/2 cup roasted carrots (unseasoned)

1 tbsp grapeseed oil

2 drops vanilla stevia

pensy’s cake spice

Gobble Gobble. I think I will definitely try this combo again…and again…but I am going to try steaming the carrots instead of roasting them. The carrots were still a bit crunchy and I would prefer them to be completely soft so I will play around with it and see what happens. I also think this would be uber lovely with some coconut oil and shredded coconut but alas, over the past couple weeks, I have discovered that I am allergic, or at least sensitive, to coconut. I’ve been going through a lot food wise lately so I am going to try it again once my system is a little more calm.

Anywho, today we have the typical Sunday planned. Lots of batch cooking, a long walk is planned for later in the day once it warms up a little and then we have a touch of laundry left to do. I hope you all enjoy your Sunday!

Have you tried grated carrots? They don’t really need to be steamed if you grate them small enough – they’ll cook as the oatmeal cooks.

You might try grated zucchini too – my favorite oatmeal/oatbran vegetable.

Nope, I haven’t. Today was my first time with carrots but I will try that this week. What do you do with the zucchini exactly? I have a couple that I need to use up. I would love to give that a try tomorrow.

Oh no! You’re allergic to coconut?!?! Sooo sad! I love coconut!
I was going to suggest what Elizabeth did. Maybe grate the carrot, boil it for a minute or two then add the oat bran and cook?

Well, I am not 100% positive about the coconut. As a mentioned a couple posts back, I am going through die off from candida so I am not sure if it is the coconut or the die off causing one of my reactions. I am going to try again in a couple weeks but honestly, I have constantly had problems with coconut but I have had a lot of trouble letting it go. Gluten. Easy. Sugar. Pretty easy. Fruit. Easy. Coconut. Really hard.
