Hittin’ the Road

Happy Saturday, Everyone!

I am feeling bright eyed and bushy tailed this morning despite not getting to sleep until really late. I woke up, read a few blogs and then hopped on my treadmill for a half hour followed by a quick yoga practice. I’m not really sure where I mustered that up from but feel so much better for it. I could really tell that it had been a while since I had exercised or practiced yoga but it felt good. Hopefully this means my mojo is back. I guess, for me, sometimes I just need to get it out in order to move on.

I started out the day with a big bowl of sweet potato oat bran and now, I am about to hit the road. We are going down to NC to visit my mom and I am making her dinner for her birthday. I prepared for the trip by taking plenty of snack and lunch with me.

I made a big salad with:

  • kale
  • sprouts
  • cukes
  • green onions
  • tomato
  • avocado
  • walnuts
  • raw pumpkin seed

I also have some homemade dressing in a recycled glass jar. it is a pretty simple dressing, olive oil, ACV plus tons of salt, pepper and spices. (It looks kind of clumpy and weird because I just took it out of the fridge.)

I also packed half of a roasted acorn squash and homemade vegetable broth for snacking. Sounds kind of weird but I am really started to love moving towards a plant based diet. I can really feel how other foods impact my body and lots of veggies do make me feel best.

Then, along with a little lunch for the dear husband, I packed it all into my lunch tote and we are going to hit the road.

  1. i’m a huge fan of yogurt for snacks, but that’s hard when i travel. then i usually grab a larabar or some dried fruit & nuts. it’s easy to carry and SO good!

  2. When I travel, my favorite snacks are Lara bars, dried fruit and nuts, raw veggies with nut butter or hummus, and fresh fruit that doesn’t bruise easily (right now it’s apples and clementines). Have a great weekend!

    I always snack on pink lady apples, Ezekiel english muffins with almond butter, Fage 2% greek yogurt, and maybe the occasional Larabar. Have a great day with your mom!

      I got the lunch tote at a place called Home Goods, it is like Marshall’s or TJ Maxx but it only has home items. I like this bag because it is big enough to hold plenty; it will hold probably a days worth of food if needed.

  5. Don’t you love how, no matter how low-energy or bad you’re feeling pre-workout, you NEVER regret it!? It’s brilliant :)
    My favourite snacks are almonds, fruit, or Nakd bars (a British thing) – I think they’re kind of like Lara bars in the USA – as in the only igredients are dates and nuts (and variations on that theme) – they are SO GOOD!!

      ACV is apple cider vinegar but I use the unfiltered, unpasteurized as it has a ton of health benefits.

      I told my mom that one of my fellow bloggers said happy birthday and she said you are too sweet :D

    I hope that you enjoy the day w/ DH and your mom. Sounds like a fun road trip! My favorite snacks are trail mix, lattes, and fruit cups. I rarely buy fruit cups, though, b/c they are always so ridiculously overpriced!

    I usually take a sandwich, apple, carrots, trail mix…portable things like that.

  10. Wow, what lovely snacks! I am a snack monster. Sometimes I forget to eat real meals because I’ve spent so much of the day grazing. Favorite snacks include: veggies or whole grain chips with hummus, baba ganoush or taramasalata, almonds, oranges with cinnamon, apples with almond butter, lara bars, apple sauce with homemade jam, kale chips, sweet potato fries and dark chocolate! Do you have a recipe for your homemade broth?

      The loosely follow a recipe from Gena at Choosing Raw but I will tell you that you could hardly make it taste bad. I use the biggest pot I have and then throw in lots of carrots, onions, celery and then throw in any saved veggie scraps (I freeze them through the week), add in lots of greens, garlic, ginger, salt and peppercorn, whatever you have, really and then let it cook on a low boil for at least an hour. The longer you let it cook, the better it will taste and the more nutritious it will be.

      I have found the broth to be a great thing to have when I just need something fast and don’t need it to hold me over very long, like an hour or so. I sip it in the am upon rising (I don’t drink coffee) and also in the evening while I am preparing dinner.

    My favorite travel snacks are usually granola bars, fruits, and almonds. If i have a cooler handy, I’ll pack along hummus and crackers or cheesesticks and fruit. The more fruit the better, because they’re so refreshing for a road trip. :D
