Ok, so I admit that the breakfast I am about to show you is a bit on the odd side but, you must admit, it is also pretty darn creative. For some reason, I woke up craving cold cereal and since most pre-made cereals are sweetened, I didn’t have any in the house. What I did have was brown rice cakes.

Yep, I made cereal out of brown rice cakes. I crumbled them up, sprinkled them with cinnamon and topped them off with unsweet vanilla almond milk. Crazy, I know, but it was actually pretty darn tasty and it satisfied my cereal craving. For a little protein action, I also had a hard boiled egg on the side.

We have a busy day today including meal planning, a session with Gena, a trip to the salon and then grocery shopping at Whole Foods and Trader Joe’s. We did get a little snow fall last night but thankfully, not nearly enough to keep up home for the day. Which is a good thing because I might have lost my marbles if I was house bound again!

I think that’s a super creative way to eat brown rice cakes and one I might try. I’m not a huge rice cake fan – I think they have a strange aftertaste – but I ate one every morning spread with PB on my way to the gym for 2 years.
Have you tried Erewhon brown rice cereal? I think it has 1g of sugar (not sure if that’s OK or not). It’s tasty, too.

smart to use rice cakes that way! i hven’t had rice cakes in forever but your breakfast looks awesome so maybe i’ll pick up some. hmm, i don’t think my breakfasts are ever unconventional, but i do get excited when i have extra time in the mornings to make something special like oat pancakes or something!

Well, there is a healthy breakfast! Rice cakes…..mmmmm…..hated them as a child but love them now. They have so many different flavors these days…..so good, and healthy!
