[...] This morning, I baked up some almond flour bread from The Gluten-Free Almond Flour Cookbook and made a sandwich for lunch. I slathered each side with hummus, sprouts and red leaf lettuce and it was fantastic. I can’t speak highly enough of this recipe. The bread was flavorful and hearty and stood up to my toppings of choice. The picture may be a little deceiving because each slice of bread is about as big as a playing card. I hope that the plow comes by! I know my sister is snowed in in PA… surprisingly, it makes me miss the snow! (Funny how you can move away from it b/c you’re sick of it, and then end up missing it.)

We went to brunch this morning, and I’m driving back to Atlanta soon. I’ll stop at my parent’s house on the way home, so that should be fun.
