Pretty in Pink

Happy Sunday, dear readers!

We are still snowed in here in Central VA and really hoping to make it out later today. I have a couple of errands to run that really can’t wait so I am just crossing my fingers to see a snow plow sometime soon. In the meantime, I had a great breakfast that I wanted to share. I started off with a green..er…pink juice.

Into the juicer went lots of organic produce:

1 head romaine

1/2 english cucumber

1/2 red beet

1/2 lemon

2 carrots

It was really tasty but I think I should have kicked up the lemon just a bit more. While my juice did it’s thing, I made the rest of my breakfast. Brown Basmatti rice that turned out a bit sticky and a couple of sunny side up eggs.

When I was growing up, we used to eat eggs and white rice for breakfast every weekend along with bacon. There was no bacon today but it still tasted good and brought back fond memories.

I’ve got a ton to do today and hoping I can get it all done. I’ve already made hummus, almond flour bread and almond cheese that I plan to use in dinner tonight. I need make a pair of vintage button earrings to complete an order I received, do laundry, exercise and do day 15 of the unstuck challenge. Hopefully, we can get out of the house to run a couple of errands but we will have to wait and see about that.

    I hope that the plow comes by! I know my sister is snowed in in PA… surprisingly, it makes me miss the snow! (Funny how you can move away from it b/c you’re sick of it, and then end up missing it.)

    We went to brunch this morning, and I’m driving back to Atlanta soon. I’ll stop at my parent’s house on the way home, so that should be fun. :)
