Tonights dinner was super fast. I asked the dear husband if he was ready for dinner and within fifteen minutes, it was on the table. I wish all meals were that fast! I went with an old stand-by even though I am trying to mix things up a bit. I roasted a couple of salmon fillets with grapeseed oil and zatar seasoning. On the side, we had stir fried collard greens with a drizzle of extra vigin olive oil.

We saved a little room for dessert so I may whip up a little something with sweet potatoes later. But first, I need to catch up on my un-stuck reading as well as do a little housework. The snow has finally stopped falling so here is to hoping we can get out of the house tomorrow!
