Sweet Potato Breakfast Mash

Reminiscent of those sinful sweet potato casseroles we all love and adore on Thanksgiving, this bowl of mashed sweet potatoes makes a hearty breakfast that is sure to please. It is easy to prepare and, with the exception of toppings,  it can even be made ahead.

Sweet Potato Breakfast Mash

2 servings

1 large sweet potato, baked and mashed (with skin on)

1 tsp earth balance or coconut oil

1 tsp cinamon

dash nutmeg

unsweet almond milk

Toppings of your choice (I like raw almond butter and chia seeds)

Combine all of the ingredients together and stir in almond milk until your desire consistency. Serve warm or cold.

Have you tried gluten free oats or gluten free oat bran? I can tolerate both of those very well.

Looks really good.

Since I only have green juice for breakfast it is a hard question to answer.. but I do eat a lot of breakfast food for lunch or dinner and I have to say the easist would oatmeal.

By the way how did you cleanse go? Did you enjoy it? Was it a good experience?

I actually didn’t do the cleanse, I started the ACD instead and actually am meeting with Gena soon for a consultation.

Neat idea! That’s like vegetable-ized oatmeal.

My favourite breakfast is steel cut oats with banana/cinnamon/nut butter, or a simple poached egg on toast.

Ooooo sweet potato breakfast mash; what a fabulous morning meal…looks amazing….I love mashed sweet potatoes with hazelnut butter, agave nectar and Greek yogurt with chia seeds for breakfast! Have a great weekend.
