Gluten Free Apple Cinnamon Muffins

Almond flour muffins have been a staple in my daily routine ever since going gluten free and these apple cinnamon muffins are everything I look for in a muffin. They are mildly sweet with a hint of spice and are packed with protein and fiber.

Gluten Free Apple Cinnamon Muffins

Makes 12 muffins

Modified from The Gluten-Free Almond Flour Cookbook by Elana’s Pantry

3 cups blanched almond flour

1/2 tsp sea salt

1/2 tsp baking soda

1 tsp cinnamon

1/2 tsp nutmeg

1/4 cup grapeseed oil

3 tbsp agave nectar

2 eggs

2 tbsp vanilla extract

3 small apples, cored and chopped

1 cup coarsely chopped pecans

1 cup coarsely chopped walnuts

Preheat the oven to 350* and line a muffin tin with paper muffin cups. Combine the almond flour, salt, baking soda, cinnamon and nutmeg in a large bowl. Combine the oil, agave, eggs, vanilla and apples in the blender and blend until smooth. Stir the wet mixture into the dry and stir until combined, add in the nuts and stir again. Fill the muffin cups all the way full and then bake for 30 to 35 minutes. Allow to cool completely and then freeze for storage. Enjoy!

Just a little side note about my unstuck challenge. My dear friend Jenny has decided that she would like to do the challenge with me so I am waiting for her Meditations from the Mat book to arrive. Hopefully, we can get started next week.

Good lord, those look WAAAAY better than the muffin FAIL I had the other day. It was a catastrophe! I’ll expect you to make those for me when I visit.

And I cannot WAIT to get started! I’m hopeful it’ll be here on Monday. Or maybe even when I get home from NH tomorrow? *fingers crossed*

I have that book as well! Read your 365 day yoga comment on ELR …I think I need to set a goal like that…I think I put too much expectation on myself – I actually did a short practice @ home yesterday and became MORE anxious and irritated after…I think it’s because I was “practicing” for a long seq of 45 mins I have to give to an “outside” class on Tues (!) to about 6 or 7 people…they’re my co-workers – and I fear judgement and being stupid…and really messing up…I keep changing my mind what to do – unsure if theyr’e going to catch on to chatturanga and salutations – but I want to keep it in…I still don’t have a routine down…before when I taught a group in the actual training – I did great – I really just went with it…
