
I stayed home from work yesterday to take care of my aching back and the only thing I wanted for breakfast was a big bowl of comforting oats. I got a little crazy with the mix ins and toppings hence the long name but boy, where they ever good.

My recipe ended up making two small portions and contained:
1/2 cup gluten free oats
1/2 cup water
1/2 cup unsweetened, vanilla almond milk
1/4 cup pumpkin puree
small banana, mushed up
a boat ton of cinnamon
pinch of salt
Peanut Butter and Chocolate Chips for toppings (not optional in my opinion
)

I cooked the oats on the stove top and let them simmer for about 15 minutes, I like them extra creamy
. The peanut butter pretty much sunk as soon as I put the spoon on top but once it started to melt, it was pure oatmeal heaven. I think this is one of my all time favorite oat combos.

oats look amazing! i just had mine, and they included rolled oats, banana, cinnamon, 1T pb and blackberries. i never mix the pb into the oats because i always lose the flavor if i do that!

Mmm looks delicious. My favourite oatmeal mix-in is just a mashed browning banana and some PB2 with a HUGE amount of cinnamon. Yum!

I love my matcha oats….cooked in half milk half water, with about a teaspoon of matcha…and topped with chopped almonds and a spoonful of AB!

Ok so I had pumpkin oats this morning and just knew that they needed a lil’ something more if you know what I’m saying – thanks for the great PB/choc idea bc I wouldn’t have thought to mix all that but I think it sounds amazing now that I think about it!!!!!!!!!!

I know exactly what they are saying. The dash of salt make a world of difference and then fun toppings just make them fab. Another good combo I like is PB + walnuts + a maple syrup drizzle. Oh, and loads of cinnamon.

Me too (on the creamy). I usually use old fashioned oats and put them in the pan with more water than the recipe calls for (usually twice as much), along with half a banana sliced very thin, and cook them for 15 min or so. Then I add peanut or almond butter (usually flavored). If I have no banana, I use pumpkin. I really prefer banana because I need no extra sweetener.
I love my oats with heaping tsp of crunchy peanut butter and a sprinkle of brown sugar
