My back is still really sore and I can’t seem to stay in one position for very long whether it be sitting, standing or lying down. But, I am in pretty positive spirits at least. I haven’t been up to much cooking but have eaten a couple of photo worthy things in the past couple of days. Starting with my new favorite breakfast: homemade bean burger with sunny side up eggs and ketchup.

I could eat this every day. Seriously.

But, some days, I must have gluten free pancakes

with scrambled eggs instead.

And when feeling snacky, at the top of my snack list has been chips and salsa. This particular salsa is from Whole Foods and is made with peaches and mangos. The balance of sweet and spicy is just right and goes perfectly with sweet potato chips.

I even mustered up the energy for a little baking though the recipe was a flop. Sigh.

I am hoping that today brings me more energy and flexability in my back so that I can prepare more photo worthy meals. Heck, who am I kidding, I just want more things to take pictures of

That bean burger and the egg looks really good. I would never think to combine something like that. It sounds delicious!
