Late Nite Dinner

I got home really late last night after a really busy day and was less than inspired in the kitchen. We have limited groceries and my energy has been a bit low. So, I threw a bunch of random stuff in a pot again and dinner was born. I probably won’t be getting any cookbook deals as a result of this but it was tasty, fast and easy. First, I sautéed some kielbasa that was in a use it or lose it situation along with some spinach was that pretty much in the same boat. Meanwhile, I cooked some gluten free pasta and when it was all cooked, I tossed it all together with garlic, olive oil, crushed red pepper, nutritional yeast a dash of nutmeg.

LOL- “I probably won’t be getting any cookbook deals as a result of this…” That cracked me up! I look at other blogs and wonder, how did they come up with this, or how did they have time to do that? I just try to remember that everyone has different schedules and I just have to do what works for me and not worry about what someone else is doing. :)

At least you make dinner when you’re ridiculously busy – that deserves an award in itself. I’m glad the husband eats his own stuff or he probably would have starved by now. :)

The meal looks tasty (what brand is the kielbasa?) and your pictures are fantastic. Love the new camera!

Hillshire farms, I think. But it was in serving size links, not the regular one. Looked safe and had an allergen warning. I haven’t reacted, either. Hoooray!
