A Nice Holiday

The dear husband and I spent Thanksgiving with  just the two of us, our kitties, books and the DVR this year. It was very relaxing and a nice way to spend the holiday. I prepared a meal that included our favorite things and we both agreed it was delicious. The star of the show was a roasted turkey breast topped with orange cranberry sauce. I brined the turkey all day and then roasted it until it was golden brown. It was moist and delicious and made me forget all of the memories of dried out turkey of Thanksgiving past.

I also made a gluten free modified version of Angela’s This Ain’t Grandmothers Sweet Potato Casserole and it turned out wonderful. It definitely was not even remotely as rich as my mother’s sweet potato casserole which is too sweet for dessert sometimes. This version was mildly sweet allowing the sweet potato flavor to really shine.

For some greens, I made raw kale salad with orange vinaigrette. I had something like this when I was in Dallas and have been dreaming up recipes ever since. I had never thought to use kale as a base for salad before but I loved it.  It makes the perfect bed of greens for wintertime salad when you crave something more substantial than mixed greens.  I’ll be playing around with this recipe and will post it soon.

And of course, Thanksgiving would not be complete without deviled eggs. I made ours with jumbo lump crab meat and they tasted like mini crab cakes. I can’t remember where I found this idea but it was truly genius. Though, I must admit, I did kind of miss regular deviled eggs and will make both kinds next year.

The meal was amazing and the company was superb. I am thankful to have this time for us to spend together and a couple more cherished days before life becomes hectic again. I hope you all enjoyed your holiday, as well, please do tell me about it in the comments!

I had a great Thanksgiving. I wish it came more than once a year! I’m thinking about doing a “Thanksgiving” in April/May this coming year…

Your Thanksgiving sounds lovely. Glad it was a good one. The sweet potato dish looks fabulous! I will have to give that a try. Sweet potatoes are one of my top ten favorites! Any time of year :) Great blog! Glad I found it … I shall be returning!
