Simple Eats & Baron Baptiste

Thank you all for your kind words about my last post. It was filled with a full spectrum of emotion and it means so much to me to have your sweet comments. I often feel that I put way too much out there for others to read and judge but I know that in the end, writing from my heart is what I am meant to do. But before this turns into another tear fest, I want to share with you some amazing eats I have had over the past couple days.

On Friday night, I made the best baked tofu and sweet potato fries. For the tofu, I liberally brushed it with olive oil, sprinkled it with salt, pepper and penzy’s pizza seasoning. It rocked our socks and was even better the next day, cold, as a snack.

Along side for a little carby goodness, I made sweet potato fries, chips, whatever you want to call them. I just called them delicious. They were simply seasoned with salt and pepper with a little ketchup on the side for dipping action.

Saturday night, after my yoga teacher training, we had another Annie’s mac n cheese concoction that I won’t bore you with but on Sunday night, I made BBQ salmon

and roasted green beans.

The salmon was super simple, all I did was season it will salt and pepper and then give it a good smear of sweet baby rays, which is gluten free, by the way. For the green beans, I just tossed them in olive oil and gave them a dash of salt and pepper before tossing into a flaming hot oven. I had never roasted green beans before but since I will roast anything once, we gave it a shot. Eh. I think I like my sweet and spicy green beans much better. But, you only live once and you won’t know until you try.

The next few days, we are really working on eating down the pantry because I am trying to stay out of the grocery store until December. The dear husband has been going to pick up essentials like fresh, organic spinach for my green smoothies but other than that, we are trying not to buy much.

This weekend, I am heading to Dallas for the Baron Baptiste workshop and I am so stoked to go. I know that it will be life changing and that I will be challenged beyond belief. I know, and try to accept, that everyone doesn’t view yoga the way my circle and I do but this one is going to go down in history, I just know it. his philosophy is beautiful and I can’t wait to be present with him.

But, for now, I must go and earn a little money so I can support my yoga habit. Bye for now, Happy Tuesday!

    • I currently work full time + for a prestigious golf club and intend to continue to work after my training is done. My goal is to earn money by writing and teaching yoga and work part time in some capacity if I need to. I know a number of teachers who support themselves by only teaching yoga and if that every presents itself to me, I think I would love it. Though, writing is also a huge passion for me and I wouldn’t feel normal without it. To me, happiness is far more important than money but I am also well aware that the bills have to be paid.

    I’m trying to do the same thing with my pantry. I used to go to the store so often; now, I just try and go every other weekend for the major stuff and then pick things up as I need them. Huge money saver!

    Your weekend in Dallas does sound like it will be life-changing! It will be so cool to be there with a bunch of like-minded people.
