Yesterday, I had the urge to bake. I wanted to make something with pumpkin and almond flour but something other than my pumpkin chocolate chip muffins. I started measuring, mixing and stirring with the intentions of making pumpkin bread only to find that I did not have a loaf pan. Well, I have a loaf pan, I just couldn’t find it :) I ended up using a bundt pan and was a little disappointed with the results. I forgot to grease the pan so it stuck and we had to dig it out with a spoon. Other than that, it tasted pretty good; I do want to tweak the recipe a bit and will post it once I get it just right.

I remember before going gluten free, I was pretty scared of baking. I wouldn’t stray far from a recipe because I don’t know anything about the chemistry of baking. Now, I am in a whole different world and I feel really free to explore and throw things out if I have to. I guess the difference is that I know that if I want baked goods, I am have to learn to bake this way. Before, I could run out and buy most anything I wanted if the desire to bake wasn’t there. Now, that just isn’t the case. It is kind of liberating, actually.

I love to bake. I only wish that I would have followed an original recipe when my end result turns out dry or just plain off in flavor. :)

I don’t bake much sweet stuff anymore since I became diabetic, but I LOVE baking bread! :D

I’m definitely afraid to mess things up. I’ve never baked anything in my life (well, only with the help of others so it doesn’t count!). I’m really good at making pancakes but that’s about it. :|

Your bread looks really good!

I love to bake and almost always mess around with the recipes. Sometimes it works better than others. When something doesn’t turn out as I wanted it to I use it as an excuse to try it again!

That is so funny you should post this today, bc I totally have some apprehension about baking since I am really not into the “exact science” of it all…. however I experimented in the kitchen yesterday and came up with some yummy carrot/pear/raisin bread! Happpppppy Monday :)

Almond flour!!! I have never heard of that, but I absolutely need to check that out today.

And by the way that looks really good! And thanks for mentioning almond flour because that will really help the line of work I’m in if it’s as healthy as it sounds… and I imagine it tastes pretty good too!

I love baked goods, but I’m not usually one to do the baking. I’m scared to improvise with baking, and I’m bored by cooking where I can’t improvise. Luckily, the husband loves baking.

I love baking :) I don’t tend to make alot of modifications though, because I’m not 100% comfortable with the science. I’ll change up all purpose flour for whole wheat no problem, and make flavour modifications, but I don’t tend to mess with oils and sweeteners much.
