This past Monday was my birthday and instead of buying the ingredients to make a gluten free cake, we decided to just try out the cookie mix we already had. I had a Pamela’s Chocolate Chip Cookie Mix that I purchased a couple of weeks back and it was time to test it out. The last time I made gluten free cookies, I used a Betty Crocker Gluten Free Mix and the results were less than impressive. Even using tiny spoonfuls, they spread out enough to form one big cookie on the pan. In order to prevent that from happening again, I decided to just bake these cookies into bars. A commenter on my first cookie post indicated that maybe I had lackluster results because of the smart balance and suggested butter. Since I don’t “do” dairy, I used grapeseed oil instead of the smart balance. Other than using grapeseed oil and making them into bars instead of cookies, I followed the directions on the package.

At first, I was unimpressed. When the cookies were still warm, they crumbled apart just like the last time. Once the cookies were completely cool, they stayed together very nicely and they do taste good. However, I do prefer the flavor of the Betty Crocker Mix much better, it tasted more like a “regular” cookie. This Pamela’s cookie was less sweet and lacked “cookie” flavor. I think because of the taste, I will try the Betty Crocker Mix again and make them into bars. I also want to try making cookies with my beloved almond flour but haven’t had much time to investigate recipes.

So, all in all, I am still in search for a great gluten free chocolate chip cookie. I’d love to have something that I can take to the holiday parties and to share with friends and family. I’ll keep trying and keep you guys informed of the results ;)

I always bake my cookies into bars – I actually prefer them that way.
I’ve tried several and Betty Crocker’s mix is by far the best. Give it another try.
