Last week, I was all smug and proud about coming in under my grocery budget and this week, I am feeling even better. My meal plan kind of went to hell in a hand basket last week and it resulted in a lot of leftovers so this week, my goal was to spend less than $75. We also needed to use up a ton of ingredients that we had on hand and as a result, have a pretty boring meal plan coming up for the week. Since we were having such a blah kind of week dinner wise, I decided to buy a pork roast. Well, I had no idea how much those things weigh and ended up paying almost $20 and frankly, I was too embarassed to tell the butcher no after he kindly wrapped it up for me. But, despite my rookie mistake, I still came in under my $75 budget.

But before I get into the meat of what we bought this week, pun kind of intended, here are a couple of pics of the things I made last week. This here a a beautiful bowl of chili that I made with the local ground beef and pinto beans; we topped it with cashew “cream” and it made a huge pot. We got fourteen hearty servings out of the pot which clocks in at just over a buck per servings which isn’t bad for an organic, local meal. I froze the leftovers into individual size portions and we will use them for grab and go lunches or dinner. $15 well spent.

I also made a lovely turkey spaghetti sauce loaded with tons of veggies and served it in an acorn squash. This made about four servings and we froze the leftovers and had them last night with a spaghetti squash. This is going to be a go to meal for many months to come, I can already tell. It was delicious and even my marathon running husband didn’t miss the pasta.

Ok, back to regularly scheduled programming. As I mentioned before, we plan to use a lot of what we already have on hand and may even have to eat out some this weekend. We are going on a very unexpected overnight trip to a yoga studio in Virginia Beach tomorrow and will have to make some adjustments. So here goes:
Frozen Produce (a great money saver)
- 1 lb organic frozen broccoli
- 1 lb organic frozen chinese veggie mix

Fresh Produce
- organic pie pumpkin
- organic white onion
- local macintosh apples
- bag of bartlett pears
- organic collard greens
- organic bananas
- hugh jass container of organic spinach
- organic spaghetti squash

Dry Ingredients
- raw almonds
- polenta
- 2 kind bars

Meat and Eggs
- 2 dozen, local, free range organic eggs
- pork shoulder roast

So, there you have it folks. That is what I bought for this week and the total was $72.34. Here are this months numbers:
This week: $72.34
Unpictured items purchased in bulk online (almond flour ($$$), dried fruit): $58
Dinner out at Uno’s: $28 (had a $10 coupon)
Last Week: $93.19
Grand Total: $251.53
Left for the month: $348.47

I also wanted to note that though I wasn’t really impressed with our trip to Uno’s on the gluten free level, Uno’s is a great place to eat otherwise. For those that don’t eat gluten free, it can be hard to understand that eating out gluten free just isn’t the same as regular eating out. My reviews of a gluten free experience may not be the same as it would be if I didn’t have to eat gluten free so said reviews are primarily targeted to my gluten free audience.
