Almond Flour Pancakes, Part II

Since I am a true pancake lover at heart, I had to give almond flour pancakes another try. The first time I made them, I was a bit disappointed with the results but that didn’t break my spirit. The second time I made them, the results were so bad, I could hardly even write about them. This time, however, the results were fantastic. I consulted Elana’s pantry once again but decided to tweak her pancakes recipe rather than the diary free flapjacks recipe. I subbed the cream for almond milk and the butter for smart balance but I otherwise followed the recipe to the letter. The batter was thick and bubbly and was the most beautiful yellow color.

They also cooked more like regular pancakes than the first try but I still discovered that smaller works better. I also stuck with lower heat so the outside would not burn before the inside was done. They cooked to a beautiful golden brown and the taste was superior to any pancake of my gluten free past. The recipe make a huge amount of pancakes so next time, I will surely cut it in half. But, other than the tweak on the milk and the butter, I think my hunt for a good pancake recipe is over. I’m a little sad that I haven’t been able to come up with my own recipe but I think I still have too much to learn in the gluten free baking world before venturing out on my own. In the meantime, I know that I have Elana as a lovely resource.

Hey, thanks so much for stopping by my blog and leaving such support. You’re right there is no need to rush the healing process – i need to reminded of this as impatience is often the source of my biggest downfalls!

Anyway I just wanted to say I found your story really inspirational, the point you seem to be at now I’d love to be able to reach someday.

Also, as an aside, those pancakes look amazing! xx
