Though yesterday was both fun and productive, I was in quite a bit of pain for most of it. I’m not sure if I was glutened by the Whole Foods hot bar I ate on Friday night or if I have just increased my grain and bean intake too much. I had finally gotten to the point that grains and beans were not making me sleepy so I thought they were OK. I guess the only thing for me to do now is to just keep listening to my body and see what happens. I know that I was kind of taking my chances with the Whole Foods hot bar but I keep hoping that I am not going to be “that” sensitive to gluten. Needless to say, I won’t be doing it again. Anywho, despite being in a lot of pain, I did have a really good day.
I woke up around five, which is just too early for a Saturday, but none the less, I woke up and sipped on coffee with light coconut milk and read blogs until I was ready to write my own. When I got hungry for breakfast, I made a bowl of gluten free oats to get me through a long morning. Into the bowl went:
1/2 cup g-free oats
1 cup almond milk
pinch of salt
a peach that was on it’s very last leg

It was delicious, I always seem to forget how wonderful the combo of peaches and nut butter is! After breakfast, I read a few more blogs and then headed to my yoga class. Deb was subbing for Candy so the class was much slower paced and less challenging than the usual vinyasa style. We focused on alignment and long holds rather than fast flows and challenging postures. I don’t typically like these types of classes because my mind wonders way too easily. Yesterday was interesting because I was able to really focus on my breath when my mind was begging the teacher to speed up. It reminded me that sometimes, the only thing we can do is just breathe. We are not always in control and if we can just breathe, we will get through whatever the moment is. I have always been pretty stubborn about the kind of yoga I like and Candy always tells me that when we are put into classes that don’t fit our “yoga mold” that it means there is something that we need to learn and I know that she is right. I think this was a really important lesson for me to learn after feeling so stressed lately. Just breathe. Thanks, Deb, I needed that.
After class, I headed home and had a snack, I was starvin marvin, for sure! I had a few pecan crackers with hummus to hold me over until I prepared lunch. I love these crackers, I feel like I could just eat them all day everyday. Sigh.

For lunch, I tried an interesting experiment that actually turned out really well. I made tuna salad spring rolls. Yeah, no joke. They were delicious, too. Inside the rolls were tuna salad, fresh spinach and shredded carrots. The spinach and carrots provided that nice crunchiness that you expect out of a spring roll.

The dear husband and I also shared this big bowl of grapes.

After lunch, I kind of dosed off until my friend Susan called to tell me that she was on the way. We had a long walk planned and it was awesome. We walked 3.5 miles on the money according the the garmin and we chatted the whole way. Susan and I share a wonderful deep friendship already, though we have only been friends for a short while. These walks are therapy for the both of us because both of us feel free to just open up and be who we are. And walks like that, despite the challenging hills, don’t feel like exercise! It was awesome. We arrived back to my house totally drenched in sweet and dove into glasses of ice water like there was no tomorrow.
Susan stuck around for a little while and we talked a little more. After she left, I took a much needed shower and then rooted around in the kitchen for a snack. I ended up eating the rest of the grapes that we didn’t finish at lunch. By the time dinner rolled around, I was mucho hungry. We had black beans topped with salsa, over easy eggs and vegan cashew cheese. It was delicious though it was pretty spicy.

After dinner, we watched a movie and I fell asleep basically right after it came on. I woke up on the couch in a lot of pain and despite the 8 o’clock hour, I hit the hay. This morning, I am still in some mild pain and think I need to focus on eating anti-inflammatory foods for the next couple of days. I might have to make some changes to my original meal plan but I think I can make it work.
We don’t have much on the agenda at all today. I have a few things I need to get ready for the week like pairing up my workout clothes and work outfits and a couple of little food prep things. Should be a fairly relaxing day. Have a good one, blog friends, I will see you tomorrow!
