I’ve loved vanilla coconut milk ice cream since my first taste of it about a year ago and I have regularly included it in my ice cream rotation. I really like the mild coconut flavor and the creamy texture. Recently, I’ve had to drastically cut back on dairy and thought that making my own would be a great way to still use my beloved ice cream maker. I couldn’t really find any recipes that I like online but I was still determined to make my own. I decided to wing it and the results were fantastic. The coconut milk ice cream is creamy, sweet with a hint of coconut on the finish. This recipe will make a great base for other creations and I can’t wait to explore the options.

Homemade Vanilla Coconut Milk Ice Cream
Makes just over one quart
3 Cans coconut milk (do not use light as it contains water and will result in iciness)
1/2 cup agave nectar
2 tbsp vanilla bean paste
Combine all of the ingredients in the blender and mix until well combined. Taste for sweetness and add in extra agave if you want it to be sweeter. Store the mixture in the refrigerator for at least two hours so that the flavors combine. Remove the mixture from the refrigerator and stir well. The mixture may become a little firm in the refrigerator and if that is the case, just process for a couple of seconds in the blender again. Add the mix to your ice cream maker according to the manufacturer instructions and let it process until it is the texture of soft serve. Remove from the ice cream maker and scoop into a freezer safe dish and freeze for at least 2 hours. Serve with toppings of your choice.
