How to Roast Potatoes

I would eat potatoes everyday if I could; they are so versatile and inexpensive. My favorite way to prepare them is to roast them and serve them along side of most anything. Give me a roasted potato over a french fry any day and I would be a happy girl. This particular recipe is my basic recipe and you can add any additional spices that you like. Rosemary would be great with a drizzle of balsamic vinegar and the basic recipe is good with ketchup :D

Oven Roasted  Potatoes

Serves 3 or 4

1 lb small red potatoes, sliced into 1/2 inch half moons

2 tbsp olive oil

1/4 tsp sea salt

1/4 tsp garlic powder

1/4 tsp onion powder

1/8 tsp black pepper

Preheat the oven to 400*. Place the sliced potatoes onto a large baking sheet and drizzle with the olive oil. Sprinkle with all of the seasoning and then stir well. The best way to ensure the potatoes are evenly coated with the oil and spices is to use your hands to mix them. Be sure the potatoes are in a single layer and then place the potatoes into the hot oven. Roast the potatoes until they are golden brown on one side, about 15 minutes, and then flip them and roast until completely cooked through, about 15 more minutes. Serve the potatoes hot or allow them to cool and make potato salad with them.

If you add a little bit of parm on top during the last few minutes of cooking, it’s amazing!
