Stovetop Creamy Oatmeal

I have always loved a nice bowl of creamy oatmeal, even as a kid. Back then, I would load my bowl of creamy oats with milk and sugar but these days, I prefer much more sophisticated toppings. I think the key to creamy oatmeal is plenty of liquid and lots of stirring. Day I say, that even somewhat overcooking your oats will lend to creaminess.

Creamy Oatmeal

Generously Serves 2

1 cup old fashioned rolled oats (I use gluten free)

1 cup water

1 cup soy milk (hemp, almond, rice, cow milk will work)

1 large sliced banana, I generally use frozen ones

pinch of salt

In a medium sized pot, combine all of the ingredients over medium heat. Constantly stir the oats until they start to thicken up. Some milks, like hemp or cow milk, will curdle when heated to boiling so be careful not to boil. Once they are thick, turn the heat to low and cover. Cook for 10 minutes, stirring every couple of minutes. For chewier oats, cook for less time and for thicker oats, cook longer. Once the oats are done to your liking, remove from heat and allow to stand for a minute or two and then top with your choice of toppings.

This bowl is topped with homemade pecan butter, fresh raspberries and a few chocolate chips.

The finished product looks really YUMMY! I want to try to make nut butter at home but all I have right now is a mini food processor. I need to invest in a “big girl” one : ) What kind do you have & do you recommend it?

Oatmeal looks like creamy goodness.
I see the beautiful pecan butter all melty on top and that reminds me that I wanted to ask you a question: do you think I can make a nut butter in my magic bullet? I do not have a food processor but have wanted to make nut butter for a while now. I am just scared to try it in my magic bullet because I don’t want it to break. haha

Madison, I do not really know anything about the magic bullet as I have never used one. I will say that it would have to be really powerful with sharp blades to make the nut butter.
