Quick and easy lunches are always on the menu at my house and avocado tuna salad is one of my favorites. While I still love tuna salad made with Duke’s mayonaise, this recipe is a great way to load up on monounsaturated fats. It tastes fantastic; even my anti-avocado husband loved it.

Avocado Tuna Salad
Makes 2 generous servings
1 6 oz can of tuna packed in water, drained
1 very ripe avocado, diced
2 eggs, hard boiled and chopped
1 tbsp olive oil
1 tsp prepared mustard
1 tbsp fresh lemon juice
sea salt, pepper, garlic powder & onion powder, to taste
Mix all of the ingredients together in a bowl and season to your liking. Serve on hearty bread with thick slices of tomato for a quick lunch. and you If you want to prepare this tuna salad in advance, be sure to cover with plastic wrap on the surface of the salad to avoid it turning brown.
