Coconut Brown Rice Recipe

Lately, I have been reading about all of the health benefits of coconut and got the idea to make coconut milk brown rice pudding. I decided to make this rice as my base and it is so delicious, it never made it to the pudding stage! It is mildly sweet and compliments spicy dishes really well. It is perfect to make in advance because it is so moist, there is no chance of it drying out. I always make my whole grains in the rice cooker because they turn out perfect every time but if you cook your rice on the stove, I imagine the 1.5 part coconut milk to 1 part rice ratio would work for the stove top as well.

Coconut Brown Rice in the Rice Cooker

Makes 6 servings

1 1/4 cups long grain brown rice

1 1/2 cups coconut milk

1 cup water

1 tbsp coconut oil

salt to taste

Turn the rice cooker on and add the coconut oil to the bowl. Once the oil in melted, add in the brown rice and stir until the rice is well coated. Add in the coconut milk, the water and the salt. Stir once more and then close the rice cooker lid. Once the cooker stops, open the lid and stir well. Serve immediately or store in the refrigerator or freezer for later use. To reheat, add a touch of water and heat in the microwave for about 30 seconds per serving.

i love, love, love all things coconut.

off topic a little, could you tell me more about intuitive eating?. i don’t know much about the philosophy. i can understand the concept — eat intuitively, but i’m sure there’s more to it than that!

I hate to Weight,

Hey there! In a nutshell, intuitive eating is learning to listen to your body, eat when you are hungry, stop when you are full and reject the diet mentality. There are no rules about what or when to eat, you let your body lead the way. In order to be successful at this, you have to deal with your emotions in a healthy way instead of using food which was the hardest step for me.
